春のお食事会 spring lunch party





栞草のスペースをお使いいただいて
お食事を提供させていただきました

今回は娘のクラスのお母さんたち
たのしく賑やかなおしゃべりを聴きながら
わたしは台所でしたく
おひるは一緒にいただきました



今回のテーマは「春の宴」!
ご期待にお応えできるよう工夫をこらしました
































三色の発芽玄米の野菜寿司
エリンギのバルサミコ醤油ソテー
紅心大根の梅酢漬け
出汁でさっと煮た大根の下には
雲丹風味の人参ペースト 紫菜の花を飾って

出汁をとった後の干し椎茸のソテーはうまみがしみ出します
お碗は蓮根しんじょうのお吸い物
カラフルな野菜の寒天寄せにはキヌアと湯むきしたミニトマト入り

そして
カブのカルパッチョ  人参ソース
アマランサス豆乳クリームパスタ
ひじきのニンニクソテーとタマネギ・生の春菊のサラダ



デザートは伊予柑ローソースの豆乳ブラマンジェ
中に生姜汁とアガペでマリネした八朔をいれました 







先週から高熱で寝込んでなんだか調子が戻っていなかったので
量子場師の方にちゃっかり調整もしていただき
私のすすむ道にひかりをあててくれるようなメッセージもいただきました
これからどうやっていこう  つねに迷いもあるけれど
自分を認めることがどんなに大切なのかを教えてくれました   





なんだか晴れ晴れとした気持ちで後かたづけ

普段、野菜の皮はほとんど剥かないけれど
お祝い膳の時は白く仕上げたいものもあり
皮がたくさん残りました
お客さまがお帰りになったあと
じっくり炒めて塩をふります
かりっとしてとても美味しいです

i was excited to meet them here
and prepared vegan celebration dishes for spring:

center plate:
vegetable sushi with home-sprouted brown rice tasted with japanese pulum vinegar,
elingi mushroom sauteed with soy source and balsamic,
pink inside chinese radish pickled in pulum vinegar,
carrot paste layered with lightly cooked chinese radish in vegan dashi and purple rape blossoms;
shiitake mushroom sauteed with herbs and soy source after used for dashi soup

vintage urushi,  japanese lacquer bowl:
lotus root and tofu dumpling colored with carrot so that it looks like shrimp
in vegan dashi soup with cooked pale blossoms and mitsuba herb picked in my garden

hand-blown glass cup:
agar vegan dashi jelly with colorful veges as papricas, carrots, bean pod, petit tomato, and quinoa 

other dishes from the left:
sweet raw turnip carpaccio with colorful carrot source;
amaranth soy milk cream pasta with shimeji mushroom and broccoli;
garlic scented dark hijiki seaweed salad with shungiku (garland chrysanthemum) green leaf


dessert:
soy milk brancmange with raw iyokan citrus source;
grain coffee soy latte



good time with good fellows
enjoyed their pleasant talking with tons of laughing and gentle smiling










after my guests has been home, and cleaning up my kitchen 
(well this time 'my guests' helped me a lot with washing dishes,
 so i only have to put them back in cupboard!)
there remained much peeled vegetable skin:
usually i don't peel it because there are so many nutritions around vegetable skin
but cooking celebration dishes, i wanted to keep dumpling white
so in that case i peeled skin and later i sauteed it, 
it comes crispy and yum only with some oil and salt…
